I was so in the mood for something sweet, yet I didn't feel like going out to the store to buy anything. After looking through the pantry & discovering I had "almost" everything to make peanut butter cookies, I decided to pull out one of my favorite
Gooseberry Patch cookbooks & see what I could come up with. As usual Gooseberry Patch came to the rescue. Page 194 of
"Dinners on a Dime" had the perfect recipe....."Magic Peanut Butter Cookies." What intrigued me was the fact that the recipe doesn't call for any flour. So with a sweet tooth in hand & ingredients on the shelf, I thought I'd give it whirl.
Magic Peanut Butter Cookies1 c. sugar
1 c. creamy peanut butter
1 egg, beaten
1 t. vanilla extract
Cream together sugar & peanut butter. Mix in remaining ingredients. Drop by teaspoonfuls onto
ungreased baking sheets. Bake at 350 degrees for about 10 minutes, until cookies are puffed and golden. Cool; remove from baking sheet.

I have been making these for years my recipe is two two and two of each.Great thing is there are flour free!
I'm a big fan of Gooseberry Patch also! I love this cookbook! This recipe is a good one...they're so simple to make when my granddaughter wants to help me in the kitchen!

I grew up on these cookies. Love them! They mean alot to me since my mom past away when I was a child and the recipe card I have is in her handwriting:) These are great for those who are going gluten free!
I love Peanut Butter cookies. I do use Simply Jif though now to make these delicious cookies with less sugar since my husband is diabetic.
