Mr. M's Italian Bread Pudding

Needing to take a dessert to a luncheon tomorrow, but not really knowing what I wanted to make, Hubby graciously came to the rescue with a warm winter treat that I hadn't even thought of...bread pudding.

Mr. M's Italian Bread Pudding
Pudding:

3-4 c. Italian Panettone desert bread, cubed
2 c. (2%) milk
5 eggs, beaten
2 c. sugar
1 c. packed brown sugar
2 tsp. vanilla extract

Glaze:
1/4 c. powdered sugar
1/2 tsp. vanilla extract
dash of cinnamon
milk

Preheat oven to 350* Grease a 9"x13" casserole dish.


Place cubed Panettone in a large mixing bowl. Set aside.


In a medium bowl mix together milk, eggs, both sugars and vanilla.


Pour mixture over the cubed bread and toss to coat well.


Pour bread mixture into prepared casserole.


Bake for 35-40 minutes or until it has set. Remove from oven and allow to cool slightly.


While bread pudding is cooling slightly, begin making your glaze by combining powdered sugar, vanilla & cinnamon in a small bowl. Slowly stir in enough milk (by Tblsp fulls) to form a slightly thick consistency. Adjust measurements as needed. You want it to be thin enough to pour/drizzle over pudding but not too thin & watery as glaze will not set properly.


Glaze pudding and serve warm or cold.
