Quick and Easy Pressure Cooker Pinto Beans

If you're like me, there's nothing like a good pot of pinto beans to warm you right down to the cockles of your soul. However, I don't always want to wait for them to cook all day on the stove top. That's when I pull out my trusty Power Pressure Cooker XL.

1-lb rinsed & sorted dry beans
1 link of sausage sliced
1 diced onion
1 tblsp. minced garlic
1 pkt. taco seasoning mix
black pepper to taste
1 tsp. olive oil

Place all ingredients in cooking insert of a 6-qt. pressure cooker. Next add 7 c. water. Place lid on and close vent. Cook on BEAN setting for 45 minutes.  They are flavorful and so creamy in texture.

Pressure Cooker Taco Soup

It's been a rainy day making it feel almost wintery. Well...in appearance not temperature. So I  figured it was a great time to make soup. But who wants to stand over the stove to make it? Not me! So instead, I put my trusty pressure cooker to work for me.


2 lbs ground beef or turkey (cooked)

1 pkt dry ranch dressing 

1 pkt dry taco seasoning

1 can ro-tel
1 can tomato sauce 
1 can ranch style beans
1/2 small bag frozen whole kernel corn
1 jar Pace brand queso blanco cheese dip
2 cups broth (beef, chicken or vegetable)

Place all ingredients in cooking pot. Secure lid and set valve to closed position. cook for 15 minutes on soup/stew setting. Allow pressure to release naturally. Serve warm. Top with grated cheese, sour cream and/or tortilla chips and tortillas.

Brown Sugar Vanilla Pork Tenderloin

Brown Sugar Vanilla Pork Tenderloin

5 lb pork tenderloin (fat trimmed)
1\2 c. Brown sugar
2 tsp. Vanilla extract
2 tblsp. Orange juice
1\2 tsp. Ground cinnamon
1 1\4 c. Beef stock

Combine brown sugar, vanilla, orange juice and cinnamon in a small bowl. Mix to form a grainy style rub.

Cut slits in meat on both sides. Slather with rub and coat well.

Place on rack in the pressure cooker pot. Add broth to bottom of the pot. Secure lid on cooker and close pressure valve. Press 'meat' button then change the cook time select button in the middle of the panel to 'medium/brown.' Let cook for 45 minutes.

Wait for natural release then remove lid. Slice and serve.
